Our wood is naturally aged

Our wood is naturally aged in the Texas sun and prior to shipment, it is heat treated to a minimum interior temperature of 160 degrees F for at least 75 minutes as outlined in USDA treatment schedule T314-c. All regulated wood products have been treated in accordance with Texas Compliance Agreement No TDA-538, TDA-534 & TDA-540.

FAQs

What kind of wood is best for a pizza oven?

Any dense hardwood that has been properly aged works as pizza oven wood, but the best options are post oak, pecan, hickory, and mesquite. Post oak is the most versatile and popular choice because it burns hot and clean with mild smoke that lets your pizza flavor come through. Pecan adds a sweet, nutty note. Hickory brings deeper smoke. Mesquite is the boldest and burns the hottest. Softwoods like pine should never be used in an outdoor oven because they burn dirty and leave resin behind.

Can I use these pizza oven splits in a Solo Stove Pi, Ooni, or Gozney?

Yes. Our 18-inch splits at 1-3 inches in diameter fit most portable wood-burning ovens, including the Solo Stove Pi, Ooni Karu, Gozney Roccbox, and similar models. If your oven has a smaller mouth or accepts only shorter splits, our pieces can be cut down easily, and shorter cooking wood options are available on our other cooking wood product pages.

How does each wood species change the flavor of my pizza?

Post oak gives mild, balanced smoke that plays well with any recipe or topping combination. Pecan is sweet and nutty, great for pork and mixed-topping pies. Hickory brings a stronger smoky flavor, ideal for meat-heavy or barbecue-style pizzas. Mesquite is the boldest with an intense, distinctive smoke that pairs well with Tex-Mex or Southwestern-style pizza. Many wood-fired pizza cooks mix two species for layered flavor.

What is the difference between pizza oven wood splits, wood chips, and wood pellets?

Splits are solid pieces of wood cut to length. They burn longer, produce more consistent heat, and provide the thermal mass a wood-fired oven needs for the pizza stone and cooking surface to reach and hold high temperature. Wood chips are thin shavings that flare up fast and burn out quickly, more useful for a smoker session than for wood-fired pizza. Wood pellets are compressed sawdust made for pellet grills, not for open wood-burning ovens. For a real wood-fired pizza with restaurant-quality results, splits are the right choice.

Is your wood kiln dried or naturally aged?

All of our cooked wood is naturally aged and seasoned in the Texas sun and is customized for cooking BBQ. We then flash dry it in the kiln according to the USDA requirements. The wood is treated at a minimum of 160 degrees Fahrenheit for 75 minutes.
