FAQs

What does hickory wood taste like?

Hickory puts out a strong, smoky flavor with a savory, almost bacon-like depth. It runs bolder than fruit woods and a touch sweeter than mesquite, which makes it a popular choice for classic barbecue flavor and a deep flavor profile. Used heavily, it can turn sharp, so many cooks run it straight on beef and blend in a fruity smoke from apple or cherry for chicken, turkey, and fish.

What meats are best with hickory?

Hickory is built for red meat. Think shoulder, ribs, brisket, and sausage, plus thick-cut bacon if you cure and smoke your own. It also carries chicken and turkey well and adds a savory note to smoked cheese. For a milder dish, cut the hickory with a sweeter wood.

What is the difference between hickory chips, chunks, and splits?

Hickory wood chips are thin shavings that ignite fast and suit a quick session on a gas grill or charcoal grill. Chunks are fist-sized pieces that smolder longer, a good fit for a kettle or smaller smoker. Splits are full pieces of real hickory that burn for hours and feed an offset smoker or a fire pit. We sell splits and boxes of cooking wood rather than bagged wood chips or hickory wood pellets, since solid wood gives a cleaner, longer rich smoke and a steadier flavor profile. Our 8-inch splits also work like large hickory chunks for a smaller cooker or charcoal grill.

Can I use hickory in a charcoal grill, smoker, or pizza oven?

Yes. Hickory works in an offset smoker, a kamado, and even wood-fired pizza ovens. For low and slow cooking, add splits to the fire and hold a steady temperature so the smoke flavor builds without turning bitter. For a quick grill, a smaller piece near the coals gives you outdoor cooking with a hint of hickory rather than a heavy smoke. Pizza builders like the high, even heat hickory throws once it burns down to coals.

Is your wood kiln-dried or naturally aged?

Our cooking wood is naturally aged and seasoned in the Texas sun, then heat-treated for BBQ to meet USDA requirements. Every piece is treated at a minimum of 160 degrees Fahrenheit for at least 75 minutes.

How much apple wood do I need?

A 1.5 cubic foot box covers a weekend or two of cooking. A quarter cord pallet carries a backyard cook through a season. Restaurants should calculate their burn rate and order by the half cord pallet or truckload.

Can I make a custom order?

Yes! Custom orders are always available. Just send us a message with exactly what products you are wanting, quantity, and where it's going, and we will review and get you a quote.
